Tank Cooks BBQ Chicken & Homemade Chips from Brian Baumgartner's Book "Seriously Good Barbecue"
Coming Tomorrow #FrankWalks with Brian Baumgartner, I took two recipes from his new book "Seriously Good Barbecue."
Mom's BBQ Chicken
Ingredients:
- Bone-in Chicken Thighs
- 1 Cup of Barbecue Sauce
- Zest of Lemon
- 2 tablespoons of parsley
Directions:
- Preheat Oven to 425°F.
- Season chicken thighs with salt, pepper, accent, and other seasonings.
- Coast Thighs with 1/2 cup of barbecue sauce.
- Place Thighs on a cookie sheet lined with parchment paper and bake for 25 minutes.
- After 25 minutes, flip the chicken and cook for another 20 minutes, drizzling excess barbecue sauce on the Thighs.
- Place the remaining 1/2 cup of barbecue sauce on the thighs and broil for five minutes, placing it closest to the broil coil. This will allow the sauce to caramelize.
- Finish Thighs with Lemon Zest and Parsley.
Homemade Chips
- Ingredients:
- 3-4 potatoes washed and unpeeled
- Seasoning of choice
- Oil for Cooking
Directions:
- Slice Potatoes thinly and soak in an ice-water bath for 20-30 minutes.
- Drain potatoes and pat them completely dry.
- Heat oil to 375°F. Make sure that the oil is hot before adding potatoes. This keeps the potatoes from soaking up the oil.
- Cook in the oil until golden brown.
- Remove with a slotted spoon and pat the potatoes dry with paper towels to remove excess oil.
- Season while warm. I used a Barbecue Dry Rub seasoning and salt.
