Tank Cooks Corned Beef and Cabbage

Ingredients: 

  • corned beef brisket 
  • 1 onion 
  • 3 cloves garlic 
  • 2 bay leaves 
  • 3 cups water 
  • 5-6 red-skinned potatoes peeled & quartered 
  • carrot sticks 
  • small head of cabbage cut into wedges 

Directions: 

  1. Chop onion into large chunks and place in the bottom of a 6 qt slow cooker. Top with corned beef and seasoning packet. You may also season the corned beef. 
  2. Add peeled and quartered potatoes. 
  3. Pour water into the slow cooker until it just about covers the corned beef. Add garlic and bay leaves. 
  4. Cook on low for 8 hours. 
  5. Add cabbage wedges and carrots to the slow cooker two hours before serving. 
  6. Remove corned beef from the slow cooker and let it rest for 15 minutes before slicing. Serve with potatoes, carrots, and cabbage.
