Sweet & Spicy One Pan Chicken
INGREDIENTS
-4 chicken thighs
-3 tbsp brown sugar
-2 dried or fresh red chilis (can sub chili flakes)
-2 tbsp soy sauce
-3 cloves of garlic, finely sliced or grated
-1 thumb-sized piece of ginger, sliced or grated
-2 tbsp apple cider vinegar
SALAD
-Juice of 1 lime
-2 tbsp soy sauce
-2 tbsp honey or brown sugar
-1/2 head of bok choy
-3 spring onions, finely sliced
-1 teaspoon sesame oil
-2 tbsp olive oiil
-sesame seeds
METHOD
-Place a pan on med-high heat and add brown sugar, soy sauce, apple cider vinegar and a splash of water
-Once bubbling add in the ginger and garlic
-Toss chicken thighs until coated, then turn skin side up and place in the over at 350 for around 30 min
-Combine salad dressing ingredients and whisk. Toss over sliced bok choy & spring onion
-Broil the chicken for the remaining 5 minutes to char the skin
-Serve with salad and enjoy
