The Easiest Penne Vodka
INGREDIENTS
-2 pieces of pancetta or bacon, cut into cubes (optional, can also sub in sweet or hot Italian sausage)
-2 cloves of garlic, thinly sliced
-3 Tbsp of vodka
-1 tin of crushed tomatoes (14 oz)
-1 cup of heavy cream
-2 tbsp of fresh basil, roughly chopped
-Fresh parmesan for garnish
METHOD
-Place a pan with bacon or pancetta on medium heat and begin to render the fat out
-Stir continuously for 5-10 minutes until the fat has rendered out (if you're not using meat skip right to the next step, using olive oil to fry the garlic)
-Add in the sliced garlic and fry for 45 seconds- 1 minute
-Pour in the vodka and flambee off the alcohol (you don't have to set fire to it, the alcohol will vaporize on its own if not ignited, just leave it on the heat for 1 minute or 2.)
-Pour in the tin of tomatoes and simmer for about 20 minutes, stirring every few minutes.
-After about 20 minutes pour in the heavy cream and stir. Allow to simmer for 5 more minutes.
-Turn off the heat and stir in fresh basil (salt & pepper accordingly)
-Transfer pasta to sauce and toss
-Serve with fresh parmesan and basil
