Super Bowl Queso | The College Cook

INGREDIENTS 

-1 jalapeno, diced

-1/2 onion, diced 

-12 oz can of diced tomatoes

-1 link of chorizo sausage

-1 block of regular cream cheese 

-1/3 cup of shredded cheddar cheese (can sub any cheese of your choice)

-1 bunch of fresh cilantro, minced 

-Salt & pepper to taste

METHOD 

-Place a pot on medium-high heat and add a swing of olive oil

-Remove the sausage from its casing and place it into the pot (break it up into small pieces with a wooden spoon) 

-Once the sausage is cooked add in diced onion and jalapeno

-Cook until the onions turn translucent (about 5 minutes) 

-Turn the heat to med-low and add in the cream cheese, stir until fully melted

-Pour in the can of tomatoes, cheese and cilantro

-Stir until combined

-Salt and pepper to taste (to make the dish spicier add a pinch of cayenne pepper or hot paprika)

-Serve warm
