Frittata | The College Cook
INGREDIENTS
-4-6 eggs, the amount depends on the size of the pan and desired serving size (6 eggs will serve 3)
-2 slices of bacon, diced (or pancetta/sausage)
-1 small onion, sliced
-3 mushrooms, sliced
-2 spring onions, sliced
-handful of grape tomatoes, cut in half
-Fresh herbs (I'm using rosemary & parsley but any fresh herb of your choosing can be subbed)
-Goats cheese (again, cheese can be subbed for whatever you like)
-Parmesan cheese
METHOD
-Begin by rendering bacon in the pan on med-high heat
-After about 5 minutes add in the vegetables and continue to sautee until softened (about 3 minutes)
-Pour over the beaten eggs and turn the heat to low
-Add in the cheese of your choosing & garnish with fresh herbs
-Stir with a spatula to ensure the eggs are evenly distributed in the pan. Let the eggs ser and begin to cook for 3 minutes. While this is happening turn the broiler on to high
-Place the pan into the oven and broil for 5-6 minutes or until the top layer of egg has set.
-Remove from oven and serve
