20 Dollar Chef - Soju Cucumber Cooler
Today on 20 Dollar Chef we keep the weekend vibe going with another cocktail. Today is a Korean inspiration. Today, we make a “Soju Cucumber Cooler.”
When I’m at my apartment in NYC I often stop at a wonderful little Korean grocery store in Koreatown. After hearing stories over the years of how hard the South Koreans party, I figured I’d give it a go. So I found this recipe. It’s extremely healthy, extremely delicious, and extremely refreshing. Soju is a distilled liquor. Can be anything from 16% to 60% alcohol.
It’s very cheap and makes for a solid change of pace.
You’re gonna need a blender or food processor. You’ll also need to whip up some simple syrup. ( Boil sugar in water til the sugar dissolves.)
Blend up your mint and cucumber (add your simple syrup to the blender as well). Strain out your liquid to mix with your drink.
Watch video for the presentation of how to add the cucumber to your glass! Then fill with ice.
Add soju to your glass (Just a little 10 count). Pour in your mint/cucumber purée, top off with soda water and garnish with mint leaves.
That’s it, you’re done!

- Bottle of Soju (Non flavored)
- Mint
- Cucumber
- Sugar for simple syrup
- Soda water
