Whole Roasted Chicken | The Quarantine Cook

Went up to northern Minnesota to visit a buddy. Had a Blast filming up there and whipping up this awesome whole roasted Chicken

INGREDIENTS
-Whole Chicken
-Fresh Herb Blend (Thyme, Rosemary & Sage)
-Onions
-Garlic
-Lemon
-Olive oil
-Butter

METHOD
-Preheat oven to 420 deg
-Finely chop herbs & pour over with olive oil (about 3 Tbsp)
-Combine oil and herbs until a paste forms
-Rub oil herb paste all over bird
-using your fingers enter the bird through the neck & gently pull the skin off of the breasts creating a cavity
-Stuff the top of the breasts with the remaining herb blend and half a stick of butter
-Slice a lemon and stuff cavity (do not overstuff, use about 2 slices)
-Place bird on roasting tray over roughly chopped onions, whole cloves of garlic (skin on) & remaining lemon slices
-Roast at 420 for 1 hour
